Actually they get it mostly right, so my hat’s off to the reporter. Where it goes wrong is making percentage cacao differences between bittersweet and semisweet chocolate. There is no such distinction in the Standards of Identity published by the FDA for chocolate. Bitterness has to do with how the beans were fermented and roasted not percentage. I could make a 75% from pure Porcelana beans...
