Renowned Pastry Chef Albert Adria Judging Bonbons - Day 2 of the 2009 Amoretti National Pastry Team Championship

It’s not just the second (and final) day of the 2009 Amoretti National Pastry Team Championship, it’s eight o’clock in the morning. SO, a panel of judges that includes Albert Adria is eating chocolate for breakfast. 24 chocolate bonbons to be exact, three from each of the eight teams competing. Day 1 saw the judging of plated desserts, and later on in Day 2 is the judging for the entremet (cakes), entremet glace (frozen cakes), and petit gateaux (small cakes). PLUS, sugar and chocolate showpieces. Though most people fixate on the showpieces because they are the most visible aspects of the competition, the taste component counts for forty per cent of the score and it’s possible to win best sugar and best chocolate showpieces but not degustation (taste) and not even place in the top three.


2009 results:
Gold - Team Chowdhury (also best degustation)
Silver - Team DeWitt (also best chocolate showpiece)
Bronze - Team Dadzie
Team Salazar - best sugar showpiece and best presentation/buffet table
Team Millican - sportsmanship
Anil Rohira - Pastry Chef of the Year
